Rise Records owner Craig Ericson would go down in blaze of prime rib glory

When prompted for their final meals, interview subjects at Rice and Bread often ponder over their choices. It is a hypothetical last dinner, after all; these things cannot be rushed. But when we ask Rise Records owner Craig Ericson what he’d want for his final chow-down, he’s already got it all picked out; the meal, the restaurant, everything…

Ericson: Okay, I know what it’s going to be. It’s a prime rib dinner; a big, huge piece, medium rare. With a bunch of broccoli. Maybe some chocolate mousse for dessert, some coffee… there it is, right there!

Why would you choose broccoli? Is that your favourite vegetable?
Yeah, it is my favourite vegetable. I’m not too into starchy things like potatoes, so I tend to overeat on the veggies. I eat so much meat, I have to help compensate with the veggies. It’s kind of a ying and yang thing.

Any particular person to cook the prime rib for you? You could probably choose anyone you want, since you’d be going down soon.
Yeah, there’s place in Portland called Clyde’s Prime Rib and it’s this super old school, 1940s mafia kind of place. I’m pretty much the youngest guy in there and it’s a bunch of senior citizens, but they’re drinking and talking about stuff, and it’s a super mysterious restaurant, so that’s my favourite place to go.

Well, we can’t bring you to Clyde’s for your final meal, because you’re stuck in jail, but we can cater in the food for you!
[Laughs] Yeah, there you go!

Anything else you’d need to help bring you into the next world?
Naw, that should do it. Maybe some things that I can’t say, you know, but it’s all good. [Laughs]
