
We’ve had a wide variety of answers to our Death Row Dinner question. But one thing they all have in common is that they are typically a comfort food. Whether it’s pizza or noodles with Velveeta, these foods brings us comfort, which makes sense when you’re facing hypothetical death. When we asked Todd Graham, Vancouver-based fermenter and secret supper host, what his final-meal request would be, we expected it to include fermented goods of some kind.
I’m sure you’ve been asked this before, but if you were on death row, what would your last meal be?
Um, let’s see, it would definitely be Asian, because that’s the food I’m most obsessed with. I just actually ate a restaurant in Los Angeles called Jitlada and it was a really traditional Thai place. They had this fermented fish organ curry, that was one of the best meals I’ve ever eaten in my life. It was phenomenal. Maybe that and a bowl of pho would be the two things. Actually it would probably be really good sushi, like a really good amount of raw fish.
Is there a special place you would have the prison guards order the sushi from?
It varies. I will often just make it. I shop at the farmer’s market most times and I buy fish from there. But there are places in Vancouver I will go, like Toshi Sushi up on Main and 16. But a lot of the time it’s me just making it myself. That is my primary diet; rice and fish.
