
Tommy Habetz, co-owner of Portland’s Bunk Sandwiches
When we asked Tommy Habetz, co-owner of Bunk Sandwiches, what his final meal would be, if he were on death row, I was convinced he was probably going to pick some kind of awesome sandwich. Well, this is one of those “don’t judge a book by the cover” kind of things, because while Habetz didn’t pick a sandwich, he stayed in the genre of classic comfort foods done well, picking another all-American favourite: pizza.
Would a sandwich be your last meal on this planet? Or what would you pick?
{Laughs} It’s funny because I have got to say it has to be pizza. Not to shamelessly plug the new pizza place that I’m opening.
Oh go ahead.
Ok then, I’m opening a pizza place, and sandwiches and pizza are two things that I’ve always been obsessive about. So I am really excited to focus on pizzas.
What is it about pizza? What makes a great pizza?
Everybody has their own tastes for sure, but for me the dough is the key to a great pizza. Then I think, lots of things like the heat of the oven, and the flour you use is very important for sure. The ingredients and all of that are important, but for me it’s all about the dough and the texture not being, to me I’m from Connecticut, so I love classic New Haven and New York style pizza dough. That’s what I’m shooting for. I’m also so obsessed about it that I’m interested in entertaining other styles and specials, just because I’m into it all.
If you were to order your last pizza on earth, what toppings would you choose?
I hate questions like this. I come across as so boring. If it is the perfect cheese pizza, there is nothing better than that. Somebody asked me my favourite ice cream flavour and I was like, I know this is so boring, but it’s vanilla. Because when vanilla is perfect, it’s so hard to do well, and when somebody does it and well, it’s the best.
It’s always hard to do the simple things really well.
I just really appreciate when stuff is done so well. Like the perfect pop song.
