Dish: The Re-Animation Poutine (photo: Chef John Hurkes)
Ingredients: Fire-braised venison heart, Canadian blue cheese crumbles, sauteed mushrooms, stout beer beef jus, and hand-cut fries.
Album: Sacrifice’s Forward To Termination - The 1987 Canadian thrash metal meal-strom.
Tasting notes: Here comes an old-school thrash vortex of food and metal. As you move forward to termination and “Terror Strikes,” you’ll feel compelled to head-bang straight into the bowl. The venison heart was flame-seared, braised, and deeply fried. Crowned on top of the hand-cut fries, the heart is submerged and then reanimated in a sea of beer and beef gravy. The creamy piquant of the Canadian cheese shrieks along with vocalist Rob Urbinati as aggressive dual guitars hack through a maelstrom of savory flavors. Each track sends you closer towards the “Light of the End” and the final fork-banger, “Pyrokinesis” (the extraordinary cooking technique of roasting food with your mind). Pair this dish with a nice seasonal porter beer and you’ll definitely be left with a thrash-eating bang-over. It’s a true heart-warmer for a cold winter day that will leave you “Forever Enslaved”!
