Ingredients: Pan-fried rainbow trout, squid-ink-infused risotto, sautéed rainbow chard, fennel, and a whipped Chain Breaker crème fraîche.

Tasting notes: Stand up and eat! This Holy Diver bites on heavy metal and is caught on guitar hooks. Can you see its stripes? It’s cooked when you know it’s clean. The fennel was obtained from a “Gypsy” at the local farmer’s market. You can either use a fork or try to tackle this dish “Straight through the Heart,” with the fucking sign of the horns. Tangled in the bass lines and “Caught in the Middle,” Vivian Campbell’s guitar solos riffle with the sweet citrus across the midnight risotto. With every mouthful, Ronnie James Dio’s legendary vocals burst through a powerhouse of flavours. The dish is paired majestically with a Deschutes Chain Breaker IPA, or a simple glass of white wine. And “Don’t Talk to Strangers,” because this dish was inspired by a blind man who I met one night in the bar after work. Let this “Invisible” dish become your “Rainbow [Trout] in the Dark.”
