Chef John Hurkes fires up the grill for Overkill Feel the Fire Flat Steak

Ingredients: Grilled flat iron steak, blood orange gremolata, green and black peppercorns, fire-seared lemon, and a sonic reduction.

Tasting notes: This delicious summertime thrash meal rises from the mid-’80s and is served right before it starts to over-grill. Can you Feel the Fire? Raise some bread, whirl a fork and “Hammerhead” right into the plate! Picking apart the shredded blood orange gremolata, Bobby Gustafson’s guitar solos rip through “Rotten to the Core” while D.D. Verni’s bass lines crack through a metal-ly of peppercorns. The skill-saw riffs of “Kill at Command” slice the perfectly marbled steak, as singer Bobby “Blitz” Ellsworth executes each heavy metal dinner chorus. Splashed with lemon juice and ignited by the sonic reduction, every mouthful combusts into a fire of flavours. You want “Second[s] Son”? The dish is extinguished with a cold American Pale Ale beer and finished when you put the cover back on the grill (enter “Sonic Reducer”). When you realize all of the patio furniture has been destroyed, it’s time to thrash-and-dash like “There’s No Tomorrow”!
