Minneapolis chef John Hurkes is back, and so far in his Perfect Pairings he’s given us a High on Fire-inspired clam and ham hock dish and a Pentagram rillette. This time around it’s a Japanese-themed burger that will bring you to your knees.

Ingredients: Yuzu kewpie mayo, wasabi onion rings, sriracha candied pork belly, soy ginger gastrique, togarashi-rubbed wagyu kobe beef, Sapporo beer pickles.

Tasting notes: A burger named after the Shinto lord of food in the form of a togarashi-rubbed wagyu kobe beast. Rumbling like an ancient death metal gong, she brings hell to her enemies, spewing whole burgers from her mouth. Her claws are pickled in Sapporo beer while her kewpie mayo eyes stare eternally across the land of the dying sun. The flavour/tempo changes as often as thick-cut, heavy riffs resonate through her candied pork belly. Like the album, the burger offers many different textures and flavours layered on top of a shaking tectonic plate of Japanese doom. Best paired with a beer that metalheads can get from their finest local Japanese vending machine, a monstrosity at nearly 10 oz., this meal may cause a serious case of “death by Hibachi.”
